This is a fiery hot condiment that is as common
as Hot Sauce or Tabasco is in Australia. It can be found on almost every
North African table and is used on many foods. Traditionally, it’s used
on kebabs, stews, soups, salads, bland vegetables, couscous, chickpeas
and cooked meats like lamb, beef or chicken. Try it as a replacement for
condiments like mustard if you like your sandwiches hot! Basically, you
can use this blend anywhere you desire.
Try it on tuna steaks, pork chops or on chicken
wings. You can use it as a powder but we suggest you add just enough hot
water to form a paste and then stir in some high quality olive oil until
you have your desired consistency. You can make a Yemeni seasoning known
as Zhug that is similar to Harissa
by adding ¼ a tsp. each of ground cloves and ground cardamom to 3 tbsp.
